It’s like a high speed blender but it can also make good nut butters etc. After about 20 minutes, I had to let my food processor cool down! A food processor is the way to go. same here, i have a powerful food processor, tried for half an hour until machine got too hot. I was thinking of putting it back in the food processor and adding some coconut oil. All I could find was one 8oz bag of unsweetened coconut at the store, so I think it took a little longer. So I started with the exact measured unsweetened coconut flakes. This recipe worked like a charm. Also found it helpful not to add all of the coconut at once. My two cents: it’s a matter of quality coconut shreds. 5. Then add more if needed. It took me about 20 minutes to make, but I only had 1 bag of shredded coconut (about 2 cups instead of the suggested 3 to 4 cups), so I had to do alot of stopping and scraping. Used a total of about 10 oz. The next important part is equipment! So easy to make in a VitaMix. Followed all of the instructions and after about 8 minutes I got a thick, creamy coconut butter! Hmm, we don’t think that would work, unfortunately! It was not working in my Ninja food processor so I switched to the Ninja full sized blender and added two and a half bags (18 oz total) of the unsweetened shredded coconut and I FINALLY got it to work! Try adding more coconut flakes. Alternatively, if placing on hot food, scoop out and it should melt quite easily on the food. Do not use sugars that tend to crystalise under certain temp conditions to avoid crystalisation/clumpiness (ie cane sugars, maple sugars, etc).
